Flourless chocolate cake
Ingredients (20-22 cm diameter cake)
- 4 eggs
- 200 g of high quality dark chocolate
- 200 g caster or icing sugar
- 100g butter
Preparation
- Preheat the oven to 180 ° C.
- Line a cake pan with parchment paper.
- Melt the chocolate in a double boiler with the butter and reserve.
- In a large bowl, beat the egg yolks with half the sugar (100 g), until you get a fine, light and fluffy mixture.
- Next, add the chocolate and butter mixture.
- In a bowl with skill and patience, or with an electric mixer with the attachment of the rods, beat the egg whites until stiff (to form the usual “peak”).
- Add the rest of the sugar (100 g).
- Add this compound of egg whites very gently, stirring from the bottom up.
- Incorporate everything well, pour into the mold and bake in a preheated oven for about 40 minutes. Always check the doneness by poking with a toothpick and that it comes out clean and dry. Never interrupt cooking by opening the oven halfway through.
- Let cool. You can unmold later and let it cool completely on a rack or in the fridge.
- To serve. Decorate with cream, strawberries or chocolate shavings, among many other options.
