Cinnamon Pancake Recipes Sweet Bite!

The pancakes cinnamon  is a delicious dessert easy to make and also their small portions, prevent fall into gluttony and excess. They are perfect for an afternoon of coffee in the company of good friends or to start with a good breakfast at home.

The mixture of the cinnamon pancakes is similar to that of the pancakes. It is a simple dessert with little investment of time and money.

These rich cinnamon pancakes can be baked in the oven for a fluffy texture. In the pan over high heat and with plenty of oil, the result is a crunchy, crusty cake.

In both cases, the secret is to sprinkle our pancake with more sugar and cinnamon when serving it. This is a fairly versatile and easy dessert to make.

This type of pancakes is eaten at the moment, as soon as they are done. It is not advisable to make them in large quantities and save them for the next day, because they get damp and lose their fluffiness.

Cinnamon pancakes or cinnamon sponges

Ingredients:

  • Egg
  • Three tablespoons of butter
  • 200 grams (1 cup) of pastry flour
  • ½ cup of milk
  • ½ cup of sugar
  • a pinch of salt
  • A teaspoon of cinnamon
  • A hint of vanilla

preparation:

  • First we beat the egg, the sugar and the three tablespoons of butter.
  • Later we add the ½ cup of milk and continue beating our preparation.
  • Then we sift the pastry flour and slowly incorporate it into the mixture.
  • Finally, we add the cinnamon powder, a touch of vanilla and a pinch of salt to bring out the flavors.
  • Next, in a tray  covered with waxed paper or spray oil, we place with the spoon, small portions of the mixture, trying to make them round.
  • Bake at 180 ºC for 10 minutes or until small holes start to appear in our pancakes.
  • This procedure can also be done in a nonstick skillet, sprayed with cooking spray. Make pancakes smaller than pancakes and cook for two minutes on each side.
  • To serve,  sprinkle with powdered sugar and cinnamon.
  • This type of pancake can be served with homemade syrup or a rich jam. They are also delicious if you accompany them with fresh fruits and whipped cream.
  • For a more elaborate dessert, try making a cinnamon pancake sandwich, placing the fresh fruit cut into small cubes along with the whipped cream as a filling, then sprinkle the dessert and top with a mint leaf.

Crunchy cinnamon

This is an option quite similar to the previous one. The big difference is the cooking process: deep frying over high heat, which results in a dessert with a more rustic and crunchy presentation.

Ingredients:

  • 200 grams of wheat flour for pastry
  • A teaspoon of baking powder
  • 1 egg
  • ¼ cup of milk (you can prepare non-dairy milk)
  • a pinch of salt
  • ½ liter of oil

preparation:

  • We put the oil in a pot and let it heat up a bit.
  • Meanwhile, we make the mixture by joining the egg with the milk, the flour and the salt. Remember that the mixture should be thick, similar to a dough.
  • We take between our hands, floured to prevent the preparation from sticking to them, small balls that we will flatten with our palms as much as we can and then we take to the fire until they are puffed and golden.
  • Once golden brown, sprinkle with powdered sugar and cinnamon. This is an inexpensive recipe, perfect to accompany infusions.
