Strawberry And White Chocolate Cookies

White chocolate and strawberries are two ingredients that combine perfectly, so joining them in some strawberry cookies is a success that children and not so children will love.

In this recipe, we show you how to make delicious strawberry and white chocolate cookies in different ways:

Strawberry and white chocolate cookies

Ingredients

  • 4 large strawberries
  • 50 g white chocolate
  • 100g butter
  • 1 egg
  • 100 g caster sugar or icing sugar
  • 250 g flour
  • ½ teaspoon of baking soda (5 g)

  • Preheat the oven to 180 ºC and prepare two baking trays with (vegetable) baking paper.
  • Let the butter soften to room temperature and then transfer it to a large container, where we will mix it with the egg and sugar with the help of a mixer.
  • Then put the sifted flour and yeast and, with a spatula, create a soft but firm dough.
  • Wash and dry the strawberries, remove the stems and cut them into small cubes. Then add to the cookie mixture and work until it forms a large, homogeneous ball. Let it rest for a few minutes.
  • Then proceed to shape the cookies: take a small amount of dough, flatten it and make a hole in the middle and fill it with pieces of white chocolate.
  • As you shape the strawberry and white chocolate cookies, you place them on a cookie sheet covered with greaseproof or baking paper. Keep it up until the dough is gone. Leave space between cookie and cookie.
  • Bake the cookies at 175ºC for 11-12 minutes. They should not get too dark and the chocolate should be melted.
  • Let cool and then serve.

Note:

You can add your personal touch and add a teaspoon of strawberry jam on top of the melted white chocolate after cooling the strawberry and white chocolate cookies .

Forms of cookies

In this recipe, we have explained how to make a thick, round homemade cookie with a white chocolate filling or center. But you can do them in other ways:

  • Round and very fine, with the help of a roller. Make a cookie as a base and another as a cover, and incorporate the white chocolate in the middle.
  • Instead of round, you can make them square and put the white chocolate in the center.
  • If you have cookie cutters of different shapes (tree, doll, house, etc.) you can make them with these shapes. You just have to put a little dough inside the mold, and then crush them well to fix with the help of a roller.
  • You can also add red food coloring to the cookie dough, so that they will have a very colorful and fun color without losing their sweet and exquisite flavor.

With two cookies as a base and a lid, with a strawberry cream as a filling and with coverage (partial or total, as you wish) of delicious white chocolate. Try to do it!

Ingredients

  • Cookie dough
  • 150 g creamy white cheese
  • 60 g unsalted butter
  • 350 g icing sugar
  • 2 strawberries
  • Red food coloring (optional)
  • White chocolate topping

Preparation

  • Prepare the cookies following the dough recipe. There will be some thin and crunchy cookies, ideal for filling with creams.
  • Reserve the cold cookies and prepare the strawberry cream:
  • With a blender, beat the butter at room temperature, with the sticks on medium speed, until it increases in volume and is whitish. Then add the cheese and beat again.
  • Beat the strawberries until pureed.  Incorporate them into the previous cream together with the icing sugar, continuing to beat.
  • Put the cream in a pastry bag and let it rest in the fridge for 90 minutes.
  • Then fill the cookies like a sandwich.
  • Melt the white chocolate in the microwave or in a double boiler, let it warm and dip half or all of each filled cookie in it. Drain the excess chocolate and put them on a non-stick paper until the chocolate sets.

Serve at a party or snack, or wherever you want!
