Quinoa With Zucchini

Quinoa is an original pseudocereal from the Andes that has the 8 essential amino acids that humans need to form proteins. This makes it a very complete food that is digested very easily. Here we present the quinoa with zucchini, an easy recipe that you must try.

Quinoa can be used to make flour, form pasta, or even ferment it to make chicha, a traditional Andean drink. Its amino acids complement the minerals in zucchini, which is rich in potassium, vitamin C and beta-carotenes, to form a very nutritious and satisfying dish.

Quinoa recipe with zucchini and carrot

Ingredients:

  • 250 ml quinoa
  • ½ l glasses of water
  • A generous tablespoon of raisins
  • 75 ml olive oil
  • ½ onion
  • 1 medium carrot
  • 1 medium zucchini
  • A teaspoon of sweet pepper
  • ½ teaspoon ground cinnamon
  • ½ lemon
  • 1 bunch of fresh coriander or parsley
  • Salt
  • Pepper

Utensils:

  • A pan
  • A knife
  • A strainer
  • A cutting board
  • A pan
  • 1 wooden spoon

preparation:

  • Heat the water, quinoa and raisins in a saucepan. Season to taste.
  • When it comes to a boil, lower the heat to medium and cook for about 20 minutes until the quinoa has absorbed all the water and has acquired a soft and semi-transparent appearance.
  • Drain it in a colander and reserve.
  • Meanwhile, wash, peel and dice the onion, carrot and zucchini.
  • In a frying pan with plenty of oil over medium heat, fry the onion until it is transparent.
  • Add the carrot, and stir for about 2 or 3 minutes, until the carrot is done.
  • Add the zucchini and cook for about 4 minutes until everything is smooth.
  • Add paprika and cinnamon and mix well.
  • Finally, add the quinoa to the pan and mix everything.
  • Correct salt and pepper and serve with a drizzle of lemon juice and chopped fresh coriander, or parsley failing that.

  • To cook quinoa well, it is best to wash it before cooking. If the same strainer that will be used to drain the water is used when removing the water, no more utensils will be used than necessary. In this way, the outer part of the quinoa that can give bitterness when cooking is eliminated.
  • For the quinoa to come out really good, it is best to put it in the saucepan when the water is already boiling.
  • The quinoa should not be cooked for more than 15 or 20 minutes, since if we go over the cooking time, it will come out pasty. A good clue to know that it is ready is that some white tails appear.

    Quinoa with zucchini recipe

    Ingredients:

    • 1 or 2 zucchini
    • 1 glass of quinoa
    • Fresh basil
    • 1 pinch of turmeric
    • 1 pinch of salt
    • Olive oil
    • Sesame oil

    Utensils:

    • A pan
    • 1 spoon
    • A pan
    • 1 knife
    • A cutting board

    preparation:

    • Wash the quinoa well and put it in a saucepan with boiling water along with the salt and turmeric. Lower the heat to a minimum and cover the saucepan.
    • Cook for 20 minutes until some white tails start to come out, indicating that the quinoa is already done.
    • Drain the cereal so that it does not absorb more water and reserve.
    • In a frying pan over the fire, sauté the zucchini with a little oil and salt  for 5 minutes.
    • Add the quinoa and sauté for another 5 minutes.
    • Add the basil and stir well.
    • Serve with oil on top.
