1. Muffins with orange and cinnamon

Ingredients

  • 3 cups of flour (360 g)
  • 1 cup of sugar (200 g)
  • ½ cup of sunflower oil (100 ml)
  • 1 yogurt (125 g)
  • 1 orange
  • 2 tablespoons of ceylon cinnamon powder (30 g)
  • 3 eggs
  • 1 tablespoon of baking powder (12 g)

Elaboration

  • First, preheat the oven to 200ºC.
  • Now, wash the orange well, grate part of the peel and squeeze out the juice. Reserve.
  • Then, in a bowl, beat the eggs and add the sugar, the oil, the juice and the orange zest, the cinnamon and the yogurt, and mix all the ingredients well until they are integrated.
  • Finally, add the flour and yeast already mixed and beat well until there are no lumps.
  • For the perfect orange and cinnamon muffins, cover the bowl with plastic wrap and chill in the fridge for at least half an hour, although it can also be overnight.
  • Then take the mixture out of the fridge and fill the molds, leaving about ¹⁄3 empty.
  • Sprinkle with a little sugar, as this will give us a crunchier and more appetizing crust.
  • Bake for 15 to 20 minutes, until the top rises and they are golden brown. We can check it with a toothpick to see if the interior is already cooked.
  • To finish, remove from the oven and let cool.

2. Orange and chocolate muffins

Ingredients

  • 3 cups of flour (360 g)
  • ½ cup of mild olive oil (100 ml)
  • 1 tablet of dark chocolate (100 g)
  • 1 orange
  • 4 eggs
  • 1 tablespoon of vanilla essence (10 ml)
  • 1 tablespoon of baking powder (12 g)

Elaboration

  • To start, preheat the oven to 200 ºC.
  • Now, wash the orange well and chop it with the peeling included.
  • Then, put the beaten eggs in the mixer and add the sugar, the olive oil, the chopped orange, the vanilla, and beat everything until you get a smooth cream.
  • In a bowl, put the cream and add the flour and yeast and mix well until there are no lumps.
  • Then, cover the bowl with plastic wrap and let it cool in the fridge for at least half an hour or as long as we want.
  • Then take the mixture out of the fridge and fill the molds, leaving about ¹⁄3 empty.
  • Bake for 15 to 20 minutes, until the top rises and the muffins are golden brown. Check if they are ready with a toothpick to see if the inside is already cooked, take them out and let them cool.
  • While they cool, we will heat the chocolate bar in a double boiler until it melts.
  • When the muffins are no longer hot, we will remove them from the mold and dip the pompadour in the melted chocolate. We can also choose to throw it over in a messy way, as if it were paint.
  • Finally, we will let them cool in the fridge until the chocolate hardens.
